Basic Keto Scones
Prep time: 25 min.
Preheat oven to 400 degrees F and place baking parchment on a baking sheet.
Combine eggs and cream cheese in a bowl and set wet ingredients aside.
In a medium bowl, combine almond flour, coconut flour, baking powder, baking soda, and salt. Mix well.
Grate the butter into the dry ingredients and mix lightly with a fork. Once mixed, slowly add in the eggs and cream cheese mixture and stir to combine.
Once combined, divide dough into 6 pieces and flatten into 1/2″ thick sections. Place dough on the prepared baking sheet and bake for 18 minutes, or until scones are golden.
This recipe is for a basic keto scone, but you may of course include flavorings or toppings to push the scone into more sweet or savory territory.
Sweet Keto Scone
Include 4 Tbs of non-sweetened, shredded coconut in the dry ingredients stage.
Top your scones with cream cheese and 1 tsp of sugar-free jam
Savory Keto Scone
Add 1 tsp each of sage, thyme, and basil in the dry ingredients stage.
Include 1/2 cup chopped bacon in the dry ingredients stage.
